So if you know me well, I rarely go into the kitchen to bake food. I have tried several times, but I don’t think I have talent in it.
But since Chloe was born I started to bake more cakes with her, for me, is a cute activity to do it together over weekend, learn to be patience for both of us, learn to read rules and make it happens and lastly gotta enjoy the result (haha no matter is a burnt cake or a yummy one) well we all learn from mistakes at the end of the day, aren’t we?
So this time we want to make chocolate muffin since I have been craving for chocolate for weeks (I have done a 2 weeks egg diet prior and it was good, but you know just craving for some particular food) and got our hand on the no artificial sweeten chocolate powder from Raymee.
We follow the below recipe and able to make two batches of our silicone molds.
- Preheat the oven to 180°C (160°C fan-forced)
- 150g Plain Flour
- 100g unsalted butter, melted
- 15g Raymee Chocolate powder
- 2 eggs, lightly beaten
- 50g caster sugar
- 140ml Milk
- 1/2 teaspoon baking powder
- Bake for 15-20 minutes until a skewer inserted into the centre comes out clean. Cool slightly in pans, then remove muffins from cases.
Since the Raymee chocolate powder already got natural Stevia leaf extract as sweetener, I cut a huge amount of sugar needed in the recipe.
